Don’t be alarmed if you have horrible childhood memories. This doesn’t taste like wet dog. Trust me. I was very skeptical of this, but had to try it. If you follow a low carb diet, or you try to, giving up potatoes might be one of the hardest things. Heck, even if you’re just ordinary and you just want to eat healthier, potatoes are just so lovely and tasty.
This, though, will change your life. Cauliflower mash not only LOOKS like mashed potatoes, it also tastes amazing and it’s guilt-free and, like potatoes, it’s got loads of vitamin C. In fact, it has more vit C. It’s also fast and simple to make.
Method:I used a bag of pre-cut cauliflower for the purposes of this exercise.
Steam the cauliflower until it’s cooked, but still a little bit firm.
Put it in a blender or a food processor and blitz. Don’t put the blender on a running loop, just keep blitzing it until it becomes firm. Remove, add butter and a little bit of cream to make it creamy. Salt and pepper to taste. You can also add garlic. You can also add some parmesan and cheddar cheese. I topped mine with spring onions. It’s really, really good. My life has been changed.
